Add Docker configuration symlink setup script

- Automates symlinking of docker-compose.yml files from repo to /opt/docker
- Includes Gitea, Jellyfin, qBittorrent, Portainer
- Symlinks daemon.json to /etc/docker
- Creates timestamped backups before replacing files
- Eliminates need for manual config copying
